Tasting Notes: Hard Candy, Dried Cranberry, Mixed Berry

This is our first time buying coffee from Robinson and we are really excited to share it with you all. Robinson is a member of the Monkaaba group in San Agustin, where we buy almost all of our Colombian coffees. His farm, San Isidro sits at 1656 MASL in La Muralla, San Agustin. This is a separation of Pink Bourbon from his Mitaca harvest from July-August 2021. Robinson produced 4 bags of Pink bourbon this harvest which we bought all of. His coffee is quite incredible. It is a little more fruit-forward than some of our other Colombian offerings. In the aroma, we find deep, lush fruit and rose followed by some pretty deep flavors of mixed berries and tart fruit like dried cranberry and cherry.

Processing details:

Cherries are collected every 15 days and are left to ferment for 36 hours in a
plastic bin with a ceramic lid. Once de-pulped, the seeds undergo a dry fermentation of 36 hours in tiled tanks. Once rinsed, the parchment is left to dry for 18-20 in a solar drier.
